Wood is the best material for building kitchen cabinets. Many manufactured cabinets have particle board in part of their construction; this helps keep the cost down for the manufacturer, but not necessarily the consumer.
The first step in building your kitchen cabinets is to decide on the wood you want and how much you will be budgeting for this project. When deciding on your wood, you will want a good quality lumber for the doors, frames and crown molding, but can use a plywood for the carcass, and shelving. Then you may want to go to your local builder supply store and check out their lumber supply and get a good do-it-yourself book on building cabinets.
If you feel comfortable using a table saw, drill, and router you can build your own cabinets. Doing the work yourself will save you money in labor, and you will be able to select a better higher quality of material. Another good thing about building your own cabinets is you can customize them anyway you want. There is also the satisfaction of being able to do it yourself.
Building a thirty foot expanse of cabinets may seem daunting but remember you build it one cabinet at a time. Cabinet manufacturers have many different options for you to consider, but they can't come close to the details you can put into your own custom built kitchen. You can select the individual boards for your door fronts to get the exact grain pattern you want. You can even find unusual wood at a local lumber mill that is not available large scale, so you will truly have a one-of-a kind kitchen.
